Caraway Glazed Carrots

Caraway glazed carrots - perfect with any roast dinner or as a side dish to any meal.




Ingredients:


  • 500g (1lb 2 oz) carrots, cut into halves or quarters lengthways, depending on the thickness of your carrots

  • 2 tbsp olive oil

  • 1 tsp caraway seeds

  • good pinch of salt

  • good pinch of cracked black peppercorns

  • a few thyme sprigs (or lemon thyme)

  • 1 tsp unsalted butter

  • good drizzle of clear honey


Serving: 4 (as a side dish)


Prep time: 5 minutes


Cook time: 30 minutes


Method:


1. Preheat the oven to 200°C/400°F/Gas Mark 6.


2. Mix all the ingredients except the honey together, spread out in a roasting tray and roast for about 25 minutes, or until soft and crisping up at the edges.


3. Drizzle over the honey and roast for a further 5 minutes.


Perfect with any roast dinner or as a side dish to any meal.


Top tip: If you can't lay your hands on caraway seeds, use cumin or coriander seeds to add a little earthiness to the dish.
